Ingredients for 4 people


1 pound whitebait
2 1/2 cups flour
2/3 cup water
1 bunch parsley
Extra virgin olive oil for frying as needed
Salt and black pepper to taste



Preparation 10 minutes preparation + 5 minutes cooking
1. Prepare a batter by combining flour, water, salt, chopped parsley and a dash of freshly ground black pepper

2. Carefully wash whitebait and dry by placing between two paper towels

3. Spoon into batter

4. Heat plenty of oil in a pan over medium/high heat (check oil temperature with a few drops of batter)

5. Drop spoonfuls of mixture to form irregular shapes and fry

6. When the fritters are golden, drain on paper towels

7. Season with salt and serve hot
