1 pound whitebait
2 1/2 cups flour
2/3 cup water
1 bunch parsley
Extra virgin olive oil for frying as needed
Salt and black pepper to taste

Preparation 10 minutes preparation + 5 minutes cooking

Prepare a batter by combining flour, water, salt, chopped parsley and a dash of freshly ground black pepper.

Carefully wash whitebait and dry by placing between two paper towels.

Spoon into batter.

Heat plenty of oil in a pan over medium/high heat (check oil temperature with a few drops of batter).

Drop spoonfuls of mixture to form irregular shapes and fry. When the fritters are golden, drain on paper towels.

Season with salt and serve hot.
