3 ea roma tomatoes
2 red bell peppers
2 cloves garlic
5 ounces guanciale (pork jowl or pancetta)
8 leaves basil
½ cup grated Pecorino cheese
2 tablespoons extra virgin olive oil
salt to taste

Preparation 45 minutes preparation + 20 minutes cooking

Dice guanciale (or pancetta).

Wash, seed and core pepper and cut into pieces. Boil in water for 2 minutes.

Cut an X on the bottom of the tomatoes and blanch in hot water for 40 seconds.

Cool by immersing in cold water, peel, quarter and seed the tomatoes.

Purée tomatoes and peppers using a food mill or a food processor.

Heat oil in a pan over medium heat and sauté peeled garlic and guanciale until golden.

Add tomato and pepper purée. Season with salt, combine and cook for 10 minutes. Stir in basil.

In the meantime, boil pasta in plenty of salted water according to package directions.

Drain and toss with the prepared sauce.

Sprinkle with grated Pecorino cheese and serve immediately.
