Ingredients for 4 people
2 cups medium grind cornmeal flour
2 cups all purpose flour (sifted)
¼ teaspoon baking powder
1 teaspoon vanilla extract
10½ tablespoons (2/3 cup) butter or lard
½ cup sugar
2/3 cup raisins
¾ cup pine nuts
2 eggs
1 cup milk
grated zest of 1 lemon
confectioner's sugar to taste
Preparation 20 minutes preparation + 20 minutes cooking

Soften butter to room temperature for at least 30 minutes.

Mix the two types of flour with baking powder and vanilla powder.

Mix the softened butter with sugar, then add eggs, milk, raisins (plumped in warm water then dried), pine nuts and lemon zest.

Mix well until evenly combined. Add sifted flour mixture gradually to avoid lumps. Shape into 2 ½-3 inch "eggs" between hands. Arrange side by side on a baking sheet lined with parchment paper.

Bake in a preheated 375° F oven for about 20-25 minutes, depending on the size of the zaleti. Remove from oven and cool to room temperature.

Decorate with a sprinkling of confectioner's sugar.
