4 egg yolks
4 tablespoons sugar
1 1/2 tablespoons flour
2 ounces dark chocolate
1/2 pound sponge cake
2 cups whole milk
1/2 cup Alchermes liqueur
Lemon peel

Preparation 45 minutes preparation + 0 minutes cooking

Prepare the pastry cream by whisking egg yolks with sugar until soft and creamy.

Add flour and mix well.

Boil milk with lemon peel.

Place egg mixture in a double boiler and add milk in a stream, stirring constantly. When the sauce is thick, remove from the heat and combine half with chocolate.

In a deep serving dish, arrange a layer of sponge cake, splash with a bit of Alchermes liqueur and cover with chocolate cream.

Make another layer of sponge cake, splash with liqueur and cover with pastry cream.

Refrigerate for a few hours.
