Ingredients for 4 people

4 egg yolks
4 tablespoons sugar
1 1/2 tablespoons flour
2 ounces dark chocolate
1/2 pound sponge cake
2 cups whole milk
1/2 cup Alchermes liqueur
Lemon peel

Preparation 45 minutes preparation
1. Prepare the pastry cream by whisking egg yolks with sugar until soft and creamy

2. Add flour and mix well

3. Boil milk with lemon peel

4. Place egg mixture in a double boiler and add milk in a stream, stirring constantly

5. When the sauce is thick, remove from the heat and combine half with chocolate

6. In a deep serving dish, arrange a layer of sponge cake, splash with a bit of Alchermes liqueur and cover with chocolate cream

7. Make another layer of sponge cake, splash with liqueur and cover with pastry cream

8. Refrigerate for a few hours
