If you're looking for a way to clear the air and ask for forgiveness, Farfalle pasta salad is the way to go. Who can resist the fun shape of Farfalle, it brings a smile to anyone, no matter the circumstances.

Ingredients for 2-3 people
- 160g Barilla Farfalle
- 150g Roma tomatoes, quartered
- 100g mushrooms, sliced
- 1 eschalot, diced
- 1 yellow capsicum, diced into cubes
- Rock salt, for pasta water
- Optional: ½ jar Barilla Basilico Sauce

TO START
Bring a large pot of water to the boil and add rock salt. -
COOK THE PASTA
Cook the Barilla Farfalle until al dente, following the instructions on the box. Drain the pasta 2 minutes before suggested time on the pack, reserving some of the pasta water. -
PREPARE THE SAUCE
Sauté the capsicum in a frying pan. Once softened, add the mushrooms and tomatoes, and leave to cook. If you prefer more sauce, add Barilla Basilico sauce to the vegetable mix.

COMBINE AND SERVE
Toss the Farfalle together with the sauce and mix until combined.
Serve with a drizzle of olive oil over the top. This dish is delicious served either hot or cold.
