Ingredients for 2 serves:
- 120g Chickpea Casarecce
- 150g chicken breast, diced in cubes
- 50g red onion, diced
- 50g red capsicum, diced in cubes
- 50g green beans, diced
- 200ml milk
- 1 garlic clove
- 1 tsp corn flour
- 1 tbs curry powder
- 2 tbsp Extra Virgin Olive Oil
- Fresh basil, to taste
COOK THE PASTAIn a large pot of boiling, salted water cook the Chickpea Casarecce according to instructions on the pack. When cooked al dente, drain and set aside.
PREPARE THE SAUCE
Pre-heat a pan with olive oil. Add the onion and garlic clove. Cook the chicken in the pan and season with salt and pepper. Add the diced capsicum and green beans together to the pan. Next, add the cornflour and curry powder. Add the milk, bringing to the boil to thicken the sauce.
COMBINE & SERVEToss the cooked Chickpea Casarecce together with the sauce until well combined. Serve hot.
