Looking for quick and easy meal prep ideas? This Barilla Conchiglie is the ultimate pasta salad, made with cherry tomatoes, arugula and hazelnuts, it’s a fun and flavourful recipe perfect for picnic season or on-the-go lunches!

Ingredients 8 Number of Servings

1 box Barilla® Conchiglie, Farfalle, Penne, or Macaroni pasta

2 tbsp extra virgin olive oil

¼ cup onion, diced

2 pints cherry tomatoes

3 cups baby arugula

½ cup chopped hazelnuts, toasted

¼ cup Parmigiano Cheese, shredded

Salt and black pepper to taste

Instructions

  • Bring a large pot of water to a boil.

  • Meanwhile in a large skillet sauté the onions in olive oil until they are translucent and slightly browned.

  • In a separate small skillet toast the hazelnuts over medium heat until golden brown and set aside.

  • To the onions, add the cherry tomatoes and sauté for 1 minute, season with salt and pepper

  • Cook the Barilla Conchiglie pasta according to the package directions then drain and toss with the tomatoes.

  • Add the arugula and stir to combine, then top with hazelnuts and cheese.
