Ingredients 8 Number of Servings

1 box Barilla® Medium Shells, Farfalle, Penne, or Macaroni

2 tbsp Extra Virgin olive oil

¼ cup Onion, diced

2 pints Cherry Tomatoes

3 cups Baby Arugula

½ cup chopped hazelnuts, toasted

¼ cup Parmigiano Cheese, shredded

Salt and black pepper to taste

Instructions

  • Bring a large pot of water to a boil.

  • Meanwhile in a large skillet sauté the onions in olive oil until they are translucent and slightly browned.

  • In a separate small skillet toast the hazelnuts over medium heat until golden brown and set aside.

  • To the onions add the cherry tomatoes and sauté for 1 minute, season with salt and pepper

  • Cook the pasta according to the package directions then drain and toss with the tomatoes.

  • Add the arugula and stir to combine, then top with hazelnuts and cheese.
