1 box Barilla Gemelli Pasta

1 container garlic and herbs Boursin Cuisine

4 tbsp olive oil, divided

2 medium zucchini, diced ½ inch

5 basil leaves, sliced

Instructions

  • Place a pot of water to boil; cook Barilla Gemelli pasta according to directions.

  • Meanwhile, in a skillet, sauté zucchini with 2 tbsp of olive oil for three minutes over high heat. Season with salt and pepper, add 2/3 cup of cooking water and add cheese, and melt well. 

  • Drain pasta and toss with zucchini cheese mixture, finish with basil and remaining olive oil before serving.
