Ingredients 5 Number of Servings

1 box Barilla Gemelli Pasta

½ cup Boursin cheese

2 cans Rio Mare tuna

5 tbsp olive oil, divided

2/3 cup red onion, diced

3 tbsp lemon juice

2/3 cup hot house cucumber, peeled, seeded, and diced

2/3 cup carrot, diced

1 tbsp Italian parsley, chopped

Salt and black pepper to taste

Instructions

  • Cook Barilla Gemelli pasta according to directions, drain one minute early and drizzle with 1 tbsp olive oil. Spread out flat on a sheet pan to cool. 

  • Meanwhile, sauté the onion with 1 tbsp of olive oil for three minutes, set aside.

  • In a bowl, whisk the Boursin cheese with remaining olive oil and the lemon juice.

  • Stir in pasta and mix well. Add all the vegetables, drained tuna and parsley, season with salt and pepper and mix well before serving.
