1 box Barilla Gemelli Pasta
½ cup Boursin cheese
2 cans Rio Mare tuna
5 tbsp olive oil, divided
2/3 cup red onion, diced
3 tbsp lemon juice
2/3 cup hot house cucumber, peeled, seeded, and diced
2/3 cup carrot, diced
1 tbsp Italian parsley, chopped

Cook Barilla Gemelli pasta according to directions, drain one minute early and drizzle with 1 tbsp olive oil. Spread out flat on a sheet pan to cool.

Meanwhile, sauté the onion with 1 tbsp of olive oil for three minutes, set aside.

In a bowl, whisk the Boursin cheese with remaining olive oil and the lemon juice.

Stir in pasta and mix well. Add all the vegetables, drained tuna and parsley, season with salt and pepper and mix well before serving.
