Ingredients 5 Number of Servings
1 box Barilla Macaroni pasta
3 tbsp lemon juice
4 tbsp extra virgin olive oil, divided
1 can corn, drained
3 cucumbers, peeled, and diced
10 oz tuna, drained
¼ cup red onion, diced
1 tbsp Italian parsley, chopped
¼ cup fresh basil, sliced
salt and black pepper to taste
Place a pot of water to boil. Cook Barilla Macaroni pasta according to directions. Drain one minute ahead of time. Drizzle with 1 tbsp olive oil and place flat on a sheet pan to cool down.
Meanwhile cut all the vegetables and set on the side.
In a large bowl, whisk remaining olive oil with lemon juice. Season with salt and pepper.
Stir in Barilla Macaroni pasta, basil, and diced vegetables, mix well.
Top with crumbled tuna and parsley before serving.
