1 box Barilla Rotini pasta
1 can canned chickpeas, drained and rinsed
5 mini cucumbers, sliced
2 pints multi coloured cherry tomatoes, halved
2/3 cup red onion, finely chopped
6 tbsp cider vinegar
5 tbsp extra-virgin olive oil
1 tsp dried Greek oregano
salt to taste
2 avocados, sliced
1 cup crumbled feta
1 cup kalamata olives, pitted
1 1/2 cups prepared hummus or tzatziki
- Cook Barilla Rotini pasta for 7 to 8 minutes for perfect al dente texture. Lay pasta on pan to cool.
- Once pasta has cooled, evenly divide pasta among bowls, then top with tomatoes, onions, cucumber, avocado, chickpeas, feta, olives, and hummus or tzatziki.
- Stir vinegar, oil, oregano, and salt in a bowl to combine. Drizzle dressing over bowl.
