Barilla® Rigatoni with Ricotta Cheese, Marinara Sauce & Mushrooms

A simple formula that brings them to the table every time – rigatoni with rich ricotta, refreshing marinara and button mushrooms.

Ingredients

Ingredients for 8 people

  • 1 box Barilla® Rigatoni
  • 1 marinara sauce
  • 4 tablespoons (60 mL) Extra Virgin Olive Oil
  • 1 small Shallot Chopped
  • 3 cups (1 kg) Button Mushrooms Sliced
  • 15 ounces (425 g) Ricotta Cheese
  • 6 leaves Fresh Basil Chopped

Instructions

    BRING a large pot of water to a boil

    HEAT olive oil in a large skillet over medium high heat
  3. 3
    ADD shallots and sauté for 5 minutes or until translucent
  4. 4
    ADD mushrooms and cook an additional 3 to 4 minutes
  5. 5
    ADD marinara sauce and ricotta cheese to skillet
  6. 6
    SIMMER for 4 minutes and set aside
  7. 7
    COOK pasta according to package directions

    DRAIN pasta; add to hot sauce and toss
  9. 9
    TRANSFER to a serving platter or bowl
  10. 10
    GARNISH with chopped basil and serve
