Barilla® Rotini Salad

with Artichokes, Black Olives, Capers, Roasted Peppers & Parmigiano



Ingredients for 8 people      

  • 1 Box Barilla® Rotini
  • 4 tablespoons (60 mL) Extra Virgin Olive Oil
  • 1 14oz pkg (397 g) Frozen Artichokes, quartered
  • ½ cup (170 g) Black Olives, chopped
  • 2 tbsp (30 mL) Capers, chopped
  • 1 Roasted Red Bell Pepper, diced
  • 1 Roasted Yellow Bell Pepper, diced
  • 2 tbsp (30 mL) Fresh Oregano, chopped
  • ½ cup (170 g) Parmigiano cheese, shredded

    In a large skillet cook artichokes in 1 tbsp (15 mL) olive oil until lightly brown in color

    Remove from heat to cool
  3. 3
    Bring a large pot of water to a boil
  4. 4
    Season water with salt and cook pasta 1 minute under required cooking time
  5. 5
    Drain and toss with 1 tbsp (15 mL) olive oil, place on sheet tray to cool down

    Once cool, place in a large bowl and add all remaining ingredients

    Toss to combine
