Whip up this Barilla Rotini Salad recipe with artichokes, olives, capers, peppers and parmigiano. Ingredients 8 Number of Servings

1 Box Barilla® Rotini

4 tablespoons (60 mL) Extra Virgin Olive Oil

1 14oz pkg (397 g) Frozen Artichokes, quartered

½ cup (170 g) Black Olives, chopped

2 tbsp (30 mL) Capers, chopped

1 Roasted Red Bell Pepper, diced

1 Roasted Yellow Bell Pepper, diced

2 tbsp (30 mL) Fresh Oregano, chopped

½ cup (170 g) Parmigiano cheese, shredded

Instructions

  • In a large skillet cook artichokes in 1 tbsp (15 mL) olive oil until lightly brown in color
  • Remove from heat to cool
  • Bring a large pot of water to a boil
  • Season water with salt and cook pasta 1 minute under required cooking time
  • Drain and toss with 1 tbsp (15 mL) olive oil, place on sheet tray to cool down
  • Once cool, place in a large bowl and add all remaining ingredients
  • Toss to combine
