This Rotini Pasta Salad features a few star ingredients – creamy and healthy avocado, fresh and fragrant basil, and high-quality al dente Barilla Rotini, to make it the perfect pasta salad solution, no matter what your need.

Ingredients 5 Number of Servings

1 box Barilla Rotini , Penne, Farfalle, Conchigile, or Macaroni Pasta

4 tbsp. extra virgin olive oil, divided

2 tbsp. lemon juice

2 ripe avocados

1 fresh mozzarella or 250g bocconcini

2 pints cherry tomatoes, halved

1 cup fresh basil, sliced

TT salt and black pepper

Instructions

  • Cook Barilla Rotini Pasta al dente according to packaging directions but drain 1 minute early, and drizzle with 1 tbsp olive oil. Place flat on a sheet pan, cool down.

  • In a big bowl, add the cooled pasta, diced avocado, diced mozzarella or bocconcini, halved cherry tomatoes and chopped basil.

  • Add the dressing: mix 3 tbsp olive oil, 2 tbsp lemon juice, salt and pepper. Mix gently and serve!
