Cook Barilla Rotini Pasta al dente according to packaging directions but drain 1 minute early, and drizzle with 1 tbsp olive oil. Place flat on a sheet pan, cool down.
In a big bowl, add the cooled pasta, diced avocado, diced mozzarella or bocconcini, halved cherry tomatoes and chopped basil.
Add the dressing: mix 3 tbsp olive oil, 2 tbsp lemon juice, salt and pepper. Mix gently and serve!
