Barilla® Spaghetti

with Chick Peas & Thyme Soup

Ingredients for 8 people       

  • 1 box Barilla® Spaghetti
  • 4 Tbsp Extra virgin olive oil
  • 1 Onion diced
  • 3 cloves Garlic chopped
  • 2 Tbsp Thyme chopped
  • 3 cans Chick Peas
  • 3 Quarts Chicken Stock
  • 1 can (14 oz) Chopped Tomatoes
  • Salt
  • Black Pepper to taste
  • 2 Tsp Parsley chiffonade

    In a large pot, sauté chopped onions and thyme in olive oil until translucent, about five minutes

    Add chopped garlic, cook additional two minutes
  3. 3
     Stir in chick peas (reserve 1 cup of chick peas for garnish), broth, and tomatoes and bring to a boil
  4. 4
     Season with salt and pepper and simmer for ten minutes

    In batches, process the soup in a blender until very smooth
  6. 6
    Add mixture to pot

    Add the reserved chick peas and bring to a boil
  8. 8
    Add Barilla® Cut Spaghetti, and cook for half of the recommended cooking time on the box

    Let rest 10 minutes

    Before serving, drizzle with olive oil and garnish with parsley
