Ingredients 5 Number of Servings

1 box Barilla spaghetti

100 ml extra virgin olive oil

1 clove of garlic

6 tbsp Parmigiano cheese, grated

2 tbsp pecorino Romano cheese, grated

30 gr pine nuts

TT Salt and black pepper

Instructions

  • Place a pot of water to boil, cook Barilla pasta al dente, according to directions. 

  • Meanwhile add pine nuts, garlic, salt, pepper, and basil in the food processor cup. Pulse multiple times until roughly chopped. Stir in 3 ice cubes, keep processing while drizzling in olive oil. Turn off, fold in cheeses. 

  • Place in a bowl, dilute with ¼ cup pasta cooking water.

  • Drain spaghetti and fold in pesto, mix thoroughly before serving.
