Ingredients 6 Number of Servings
1 box Barilla Cut Macaroni
4 cups iceberg salad, shredded
1 lb grilled chicken breast, sliced
2 avocados, sliced
1 cup blue cheese, crumbled
6 slices bacon, crispy and cut in strips
3 hard-boiled eggs, chopped
5 ripe plum tomatoes, diced
1 bunch green onions, sliced
TT salt and black pepper
1 lemon, juiced
In a skillet sauté chicken with 2 tbsp. of olive oil, season with salt and black pepper, set aside.
Cook Cut Macaroni 1 minute short of recommended cook time, drizzle with 1 tbsp. evoo, cool down on flat on a tray.
Combine pasta, salad, chicken, avocado, tomatoes in a bowl.
Season with remaining olive oil, lemon juice, salt and pepper and mix well.
- Top with blue cheese, crispy bacon and green onion before serving.
