Greek Pasta Salad

Ingredients 6 Number of Servings

1 box Barilla Rotini

1 cup cherry tomatoes, halved

1/2 cup red onion, sliced thinly

1/2 cup cucumber, diced

1/2 cup black olives, chopped

1/4 cup of lite feta, crumbled

1/3 cup parsley, chopped

Salt + pepper to taste

 

Greek Salad Dressing

1/3 cup extra virgin olive oil

1/3 cup red wine vinegar

2 tsp dried oregano

2 tsp Dijon mustard

1 tsp of garlic, minced

Instructions

  • Cook Barilla Pasta to al dente. (Barilla recommends 7-8 minutes.)
  • Once pasta is strained and cooled, pour into a mixing bowl. Add cherry tomatoes, red onion, cucumber, black olives and mix together. Add in feta and parsley and mix together.
  • Meanwhile, in a separate small bowl mix together all of the ingredients for the Greek salad dressing and pour on top of the pasta. Mix together until all pasta is evenly coated with the dressing. Add salt and pepper to taste.
  • Serve and enjoy!
