Barilla® Greek Pasta Salad

This Greek Pasta Salad recipe from viral foodie sensation, Jamie Milne of @everything_delish, is not only vibrant in colour, but also loaded with flavour from fresh vegetables and a homemade Greek salad dressing. It's also the perfect way to eat in line with the Mediterranean Diet.

Ingredients 6 Number of Servings

1 box Barilla Rotini

 

1 cup cherry tomatoes, halved

 

1/2 cup red onion, thinly sliced

 

1/2 cup cucumber, diced

 

1/2 cup black olives, chopped

 

1/4 cup lite feta, crumbled

 

1/3 cup parsley, chopped

 

Salt + pepper to taste

 

Greek Salad Dressing:

 

1/3 cup extra virgin olive oil

 

1/3 cup red wine vinegar

 

2 tsp dried oregano

 

2 tsp Dijon mustard

 

1 tsp garlic, minced

Instructions

  • Cook Barilla Pasta Al Dente (recommended 7-8 minutes).
  •  Once pasta is strained and cooled, pour into a mixing bowl. Add cherry tomatoes, red onion, cucumber, black olives and mix together. Add in feta and parsley and mix together.

  • Meanwhile, in a separate small bowl mix together all of the ingredients for the Greek salad dressing and pour on top of the pasta. Mix together until all pasta is evenly coated with the dressing. Add salt and pepper to taste.
  • Serve and enjoy!
