Italian Chicken Soup with Barilla Pastina

Pastina in brodo is a traditional Italian chicken soup. This recipe uses tiny pasta stars known as Barilla Pastina. Made with flavourful chicken broth, Chef Lorenzo Boni's recipe is the ultimate comfort food and a healthy and easy dinner recipe idea everyone will love.

Ingredients 3 Number of Servings

If using ready-made broth:

1 cup Barilla Pastina Pasta

6 cups chicken broth

1 tbsp butter (optional)

½ cup Parmigiano (optional)

To make the broth from scratch:

1 cup Barilla Pastina Pasta

6 chicken thighs

2 lbs chicken bones

1 stalk celery

2 carrots

1 yellow onion, halved, peel on

1 tbsp black pepper corn

1 plum tomato, halved

3 bay leaves

1 Parmigiano rind (optional)

½ bunch Italian parsley

Sea salt to taste

Instructions

  • If using ready-made Chicken broth:

    Bring broth to boil and add pastina pasta.

  • Cook 2 minutes short of the recommended cooking time.

  • Let rest for 10 minutes before serving. If desired, top with butter and cheese.

  • To make the Chicken broth from scratch:

    Place all chicken broth ingredients in a pot and cover with 7.5L of water.

  • Bring chicken broth to boil, then simmer for 3 hours. 

  • Strain the chicken broth and return to stove. (Tip: Please note that any excess chicken broth will freeze very well for future use!)

  • Cook pastina pasta in chicken broth 2 minutes short of the recommended cooking time. Enjoy!
