Ingredients 6 Number of Servings
1 box of Barilla Orzo pasta
1 cup cherry tomatoes
1 small white onion, diced
2 small zucchinis, sliced
2 cups cremini mushrooms, sliced
2 tbsp olive oil
2 sprigs thyme
salt & pepper
4 cups vegetable broth
2 handfuls of spinach
2 garlic cloves, grated
½ cup parmesan cheese, grated
1 ½ cups shredded mozzarella cheese
1 handful fresh basil, chopped
Preheat oven to 400F degrees. Add tomatoes, onion, zucchini, garlic, and mushrooms to a large baking dish. Drizzle olive oil over top, season with fresh thyme, salt & pepper and mix together until veggies are evenly coated. Bake in oven for 15-20 minutes.
Remove baking dish and add in Barilla Orzo pasta and veggie broth. Mix together and add baking dish back into the oven for 20 minutes.
- Remove baking dish and add in spinach and mix together. Add to oven for 8-10 minutes. Remove and top with parmesan and shredded mozzarella. Add back to the oven for 5-10 minutes until cheese is melted. Broil for 2-5 minutes until cheese is bubbly and has a bit of color.
Remove from oven and top with fresh basil. Serve and enjoy!
