One Pot Creamy Mushroom & Spinach Barilla® Orzo

Ingredients 5 Number of Servings

1 box Barilla Orzo

2 tbsp olive oil 

4 cups cremini mushrooms 

Salt & pepper 

1/4 cup white wine 

1 cup chicken broth 

1 cup whole milk 

2 tbsp butter 

1 cup parmesan cheese 

2 cups spinach

Instructions

  • Heat dutch oven to med-high heat. Add olive oil and mushrooms. Cook down 8-10 minutes until mushrooms are soft and season with salt & pepper. Add wine and cook for 3-4 minutes. Add in chicken broth and milk. Season with salt & pepper and mix together. Once broth is simmered, add in Barilla Orzo and cook for 10-12 minutes until orzo is soft and liquid has been absorbed. 
  • Bring temperature to low-med heat and add in butter and parmesan cheese. Mix together until combined. Add in spinach and mix together until spinach is wilted. Plate orzo and top with parmesan cheese & black pepper. Serve immediately and enjoy!
