with shrimp, plantain, and mango

Ingredients 6 Number of Servings
¾ lb Barilla Penne Rigate
1 cup cooking water
2 tbsp avocado oil
12 oz. shrimp, large dice
1 garlic clove, minced
1 tsp paprika
1 tbsp jerk seasoning
2/3 cup onion, small dice
2/3 cup roasted red pepper, small dice
2/3 cup ripe plantain, small dice
¼ cup mango, small dice
2 tbsp cup cilantro
2 tbsp green onion
Salt to taste
Black Pepper to taste
Cook pasta 1 min. less than package directions; reserve 1 cup of cooking water.
Meanwhile in a skillet over med./high heat add oil, onion, and sauté 2-3 min. or until translucent.
Add garlic and seasonings, followed by red pepper and plantains; cook for an additional 1-2 minutes. Then, add shrimp and sauté for 2-3 min.
Add cooking water to the skillet and bring to a simmer. Drain pasta and add to the skillet.
Remove from the fire and add mango, toss well. Garnish with green onion and cilantro.
