1 box Barilla Rotini

4 tbsp extra virgin olive oil

1 lb medium shrimp, peeled and deveined

4 cups baby arugula

2 pints grape tomatoes, halved

¼ cup Parmigiano-Reggiano cheese, grated

Salt and pepper to taste

Instructions

  • In a large skillet heat the olive oil over medium-high heat then add the shrimp and cook on both sides until slightly brown.

  • Add the arugula and tomatoes, season with salt and pepper and cook for one minute.

  • Cook Barilla Rotini for 7 to 8 minutes for perfect al dente texture, drain reserving 1/2 cup of cooking water, then combine with the shrimp, top with cheese, serve and enjoy.
