Ingredients

1 box Gluten Free Rotini
4 Tbsp Extra virgin olive oil
2 garlic cloves, minced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 green bell pepper, diced
1 15oz can, cannellini beans, drained
1 Tbsp Flat leaf parsley, chopped
½ cup, Romano cheese, grated 
Salt and pepper to taste

Instructions

  • Bring a large pot of water to a boil, meanwhile sauté garlic with olive oil until slightly yellow in color, about one minute.
  • Add the peppers and sauté for  4-5 minutes over medium heat.
  • Add the peppers and sauté for  4-5 minutes over medium heat.
  • Cook pasta according to directions, but drain 1 minute earlier reserving ¾  cup cooking water.
  • Add the pasta and the cooking water to the sauce and finish cooking in the sauce.
  • Once the sauce has thickened up, remove the skillet from the heat and fold in the cheese and garnish with parsley.
