Ingredients 6 Number of Servings
3 Tbsp. Extra virgin olive oil
1 Garlic clove, minced
1 ¼ C. Yellow onion, small dice
1 ½ C. Chicken broth
1 ¼ C. Pepperoni, diced
½ C. Pecorino cheese, grated
8 Basil leaves, torn
Salt to taste
Black pepper to taste
- Cook pasta according to package directions.
- Meanwhile, in a skillet over medium heat add olive oil, garlic, and onion. Cook until translucent, about 1-2 min.
- Add chicken broth.
Drain pasta and add to skillet with pepperoni.
Remove from the fire and add cheese and basil. Toss well and serve.
