In Barilla's famous Pesto Genovese the freshest basil leaves are combined with Parmigiano Reggiano PDO in a surprisingly creamy texture. Prepared without preservatives, Genovese pesto without garlic was born from the need to offer the unique experience of Genovese pesto, even to those who don't like garlic, without compromising its taste.
What distinguishes Barilla Pesto is its creaminess obtained thanks to a delicate preparation method: all the ingredients are mixed until we obtain a creamy and homogeneous emulsion. Furthermore, to best preserve the aroma, color and original taste of the ingredients, we always mix them cold. Our basil is picked at dawn to arrive fresh in our factory in Rubbiano and, to preserve the natural aroma of Parmigiano Reggiano DOP, we purchase the whole wheels directly and grate it just before adding it to our Pesto alla Genovese. Between the moment the ingredients start to be prepared and the moment the pesto is put into the jar, it takes less than three hours in order to preserve the original color and aroma.
