Collezione Three Cheese Tortellini & Vegetable Primavera



Ingredients for 6 people

  • 1 Box Barilla® Three Cheese Tortellini - Family Size
  • 1/2 bunch Asparagus
  • 1/2 cup Scallion White Part Only
  • 3 tbs. Extra Virgin Olive Oil
  • 1 Small Zucchini Diced Seeded
  • 2 Plum Tomatoes Diced Peeled
  • 1/2 cup Parmigiano-Reggiano Cheese Grated

    Bring a large pot of water to a boil
  2. 2
    Remove the asparagus tips and cut the remaining part into ¼ inch long pieces
  3. 3
    Slice scallions into small rings
  4. 4
    Sauté the scallions, zucchini and asparagus in oil in a medium skillet over medium heat for about 8 minutes
  5. 5
    Add tomatoes and sauté for 2 more minutes
  6. 6
    Season with salt and pepper
  7. 7
    Cook Three Cheese Tortellini according to package directions
  8. 8
    Drain and add to the vegetable sauce
  9. 9
    Sprinkle with cheese and serve
