Ingredients for 6 people

  • 1 Box Barilla® Three Cheese Tortellini - Family Size
  • 1/2 bunch Asparagus
  • 1/2 cup Scallion White Part Only
  • 3 tbs. Extra Virgin Olive Oil
  • 1 Small Zucchini Diced Seeded
  • 2 Plum Tomatoes Diced Peeled
  • 1/2 cup Parmigiano-Reggiano Cheese Grated

  • Bring a large pot of water to a boil
  • Remove the asparagus tips and cut the remaining part into ¼ inch long pieces
  • Slice scallions into small rings
  • Sauté the scallions, zucchini and asparagus in oil in a medium skillet over medium heat for about 8 minutes
  • Add tomatoes and sauté for 2 more minutes
  • Season with salt and pepper
  • Cook Three Cheese Tortellini according to package directions
  • Drain and add to the vegetable sauce
  • Sprinkle with cheese and serve
