- 160g Barilla® Spaghetti
- 80g Guanciale
- 50g Onion
- 25ml Extra virgin olive oil
- 250g Tomatoes
- Salt and chilli pepper (to taste)
- 30g Pecorino Romano, grated

Instructions
- Cut bacon into strips and sauté in a frying pan with a table spoon of extra virgin olive oil. When cooked, remove and set aside
- In the same pan cook finely minced onion until soft, and add chilli pepper
- Blanch the tomatoes in boiling water for 30 seconds, cool in ice cold water, peel and remove seeds
- Cut the tomatoes into strips, then mix with onion and guanciale. Salt and finish cooking
- Cook spaghetti in boiling salted water, drain and sauté in a frying pan with the sauce
- Spread with grated Pecorino cheese.
