Grilled Chicken Breasts

Preparation Time:  10 minutes   
Cook time:  10 minutes
Servings:  4

Ingredients

1 pound boneless skinless chicken breasts, cut into 4 portions
2 tablespoons extra virgin olive oil
2 teaspoons dried parsley
1-1/2 teaspoons lemon juice
1 teaspoon salt 
½ teaspoon ground black pepper 
½ teaspoon onion powder

Preparation

  1. Add all ingredients to large re-sealable plastic bag. Seal bag and gently shake to coat chicken with seasonings. Let stand at room temperature 1 hour to marinate or refrigerate overnight.
  2. Preheat grill to medium-high heat and lightly oil grill grate.  Cook chicken 10 to 12 min. or until done (165°F), turning occasionally.

 

Stovetop Macaroni & Cheese

Preparation Time:  10 minutes   
Cook time:  15 minutes
Servings:  8

Ingredients

1 box Barilla® Elbows
5 tablespoons butter
5 tablespoons flour
5 cups milk
2-½ cups cheddar cheese, shredded
Salt and ground white pepper, to taste

Preparation

  1. Cook pasta according to package directions; drain. Return to pot; cover to keep warm.
  2. Meanwhile, melt butter in medium saucepan on medium heat, stirring to avoid browning. Add flour; cook and stir 2 min. Add milk gradually while whisking constantly. Bring to a simmer, making sure milk does not scorch on bottom of pan. Add cheese; whisk until smooth. Season to taste with salt and pepper.
  3. Pour sauce over pasta in pan. Mix gently until thoroughly coated.

 

Warm Potato Salad

Preparation Time:  15 minutes   
Cook time:  15 minutes
Servings:  8

Ingredients

12 small red potatoes, cut into wedges
½ cup green onions, chopped
½ cup extra virgin olive oil
¼ cup red wine vinegar
1-1/2 teaspoons garlic powder
1-1/2 teaspoons onion powder
1-1/2 teaspoons lemon juice
½ teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon sugar
¼ teaspoon dried oregano
¼ teaspoon dried rosemary
1 pinch crushed red pepper

Preparation

  1. Place potatoes in a large pot with enough water to cover; season generously with salt. Bring to a boil on high heat. Simmer on medium-low heat 10 to 12 min. or until tender. Drain well. Transfer potatoes to large bowl; add green onions.
  2. Whisk remaining ingredients in a separate small bowl until well blended. Pour over warm potatoes. Mix gently.

Steamed Broccoli & Carrots with Lemon

Preparation Time:  10 minutes   
Cook time:  5 minutes
Servings:  4

Ingredients

2 cups broccoli florets
1 cup matchstick-cut carrots
2 tablespoons lemon juice
1 teaspoon extra virgin olive oil
Salt and ground black pepper, to taste

Preparation

  1. Steam vegetables 5 minutes or until tender. Transfer to medium-size bowl.
  2. Add remaining ingredients. Mix gently.
