Creamy, smoky & indulgent!
While this is a famous Roman dish, the combination of ham, eggs, cheese and pasta is one that's celebrated throughout all of Italy. There's much debate about the perfect carbonara, but sourcing guanciale (cured pig's cheek), going heavy on the pepper and cracking it fresh, as well as controlling the temperature of the pan, are what's key to this delicious, comforting pasta.
With fresh parsley & pecorino cheese
I’ve taken the principle of carbonara, and switched it up with sausages and fresh parsley to create quick and easy meatballs, instead of using the traditional guanciale (cured pig’s cheek). A handful of asparagus into the mix brings a bit of freshness to this gorgeous plate of food. So good.

This is a delightfully simple yet luxurious meal that is sure to wow everyone. It’s by no means authentic, but more a celebration of the classic carbonara flavours, with a crisp exterior contrasting with the soft, creamy interior. Plus, I’ve added ricotta to the party just to help hold everything together. Total comfort heaven.
