Shells with Cremini Mushrooms, Goat Cheese and Thyme

Sweeten things up with a golden brown sauce.
Serves: 8
Prep Time: 5 minutes
Cook Time: 18 minutes
Ingredients
1 box shells
2 tablespoons butter
2 tablespoons olive oil
1 large yellow onion, sliced
4 cups cremini mushrooms, quartered
1 tablespoon fresh thyme, chopped
kosher salt and black pepper
4 ounces fresh goat cheese
Directions
1. In large sauté pan over medium high heat place olive oil and butter
2. Add sliced onions and sauté until golden brown
3. Add mushrooms and sauté until golden brown
4. Add thyme and season with salt and pepper
5. While mushrooms are cooking, cook pasta according to package directions
6. Drain and reserve ½ cup of pasta water
7. Add pasta and water to mushroom onion mixture
8. Toss with fresh goat cheese
9. Garnish with fresh thyme
