Thin Spaghetti with Avocado, Charred Jalapeno & Spicy Pepitas


1 box Barilla Thin Spaghetti
2 ripe avocados
4 tablespoons avocado oil
1 lime, juiced
1 jalapeno, charred on the fire and sliced
2 tablespoons pumpkin seeds
¼ teaspoon Chipotle pepper, ground
¼ teaspoon vegetable oil
sea salt to taste

1. Place a pot of water to boil. Cook pasta according to directions, drain and rinse under cold water for one minute
2. Season with 1 tablespoon avocado oil, salt. Cover and set aside
3. Meanwhile smash avocado with the remaining oil and 2 tablespoons of cold water
4. Season with salt and lime juice
5. Separately sauté pumpkin seeds with vegetables oil and Chipotle pepper powder until slightly browned, set aside
6. Combine spaghetti with avocado mixture and sliced jalapeno pepper
7. Serve topped with spicy pumpkin seeds
