Fajita Rigatoni Recipe

Who needs tortillas when you have rigatoni?
Serves: 8
Prep Time: 30 minutes
Ingredients
1 box rigatoni
500 grams skirt steak, fajita cut
1 small cilantro fist, chopped
2 green peppers, seeded and charred
2 red peppers, seeded and charred
2 yellow peppers, seeded and charred
1 white onion, diced
1 garlic clove, peeled and chopped
350 ml olive oil
Directions
1. Bring a large pot of water to a boil with a pinch of salt
2. Bring a large skillet to medium heat, add 250 ml olive oil and stir fry the onion, peppers, and garlic until light Brown. Take out and reserve
3. Cook pasta as directed
4. Add more olive oil to the same sauce pan and cook fajitas in medium heat for 8 minutes or until caramel color
5. Add vegetables and mix
6. Drain pasta, add to the meat and vegetable mix
7. Serve with chopped fresh cilantro on top
