Rigatoni and Spaghetti Squash, Sage and Hickory Smoked Bacon

Seasonal veggies – like spaghetti squash – are the perfect fresh, healthy complements to your pasta dinner. 

1 box rigatoni
5 tablespoons butter
10 sage leaves
½ yellow onion, diced
½ spaghetti squash, baked*
2/3 cup hickory smoked bacon, julienne
½ cup Parmigiano cheese, shredded
Salt and black pepper, to taste

1. Bring pot of water to boil, cook pasta according to directions
2. Meanwhile, in a skillet over medium heat, sauté bacon with sage and garlic with olive oil until bacon is slightly browned and rendered
3. Add spaghetti squash, cook for two minutes over high heat
4. Add 1 cup of cooking water, season with salt and pepper and bring to simmer
5. Drain pasta and toss with spaghetti squash mixture
6. Add Parmigiano before serving
