Tri-Color Rotini Pasta Salad with Cherry Tomatoes, Fresh Mozzarella, Snow Peas and Basil

A burst of color on your plate can lighten up a dreary day.

Serving: 6 people

Ingredients
1 box tri-color rotini
6 tablespoons extra virgin olive oil
2 tablespoons lemon juice
2 pints cherry tomatoes, halved
2 balls fresh mozzarella, diced
2 cups snow peas, blanched and cut in half
6 fresh basil leaves, chiffonade
salt and black pepper, to taste

Directions
1. Bring a large pot of water to a boil; season with salt
2. Cook pasta 1 minute less than package directions
3. drain pasta and toss with 1 tablespoon olive oil in a large mixing bowl; place on a sheet tray to cool
4. Combine all ingredients with pasta and gently toss
5. Season with salt and black pepper
