Bacon and Roasted Brussels Sprouts Penne Recipe

The trendiest ingredients in a most pleasing dish.

Servings: 8 people

Ingredients
1 box penne
1 tablespoon olive oil
¼ cup shallots, thinly sliced
4 cloves garlic, minced
2 lb. Brussels sprouts, fresh
1 cup chicken broth, low-sodium preferred
8 slices raw bacon
¼ cup chopped pecans, roasted and chopped
¼ cup Parmesan cheese, grated
salt and pepper to taste

Directions
1. Bring a large pot of water to a boil; cook the pasta according to the directions
2. Preheat oven to 350°F
3. In another pot of boiling water, blanch Brussels sprouts for about 5 minutes; place drained Brussels sprouts on baking pan in fridge to cool
4. Once cooled cut Brussels sprouts in half
5. In an oven-safe skillet, cook bacon until crisp, remove and crumble; pour off all but 1 tablespoon of bacon fat
6. Add garlic and shallots to skillet and sauté until soft; about 2 minutes
7. To same skillet add olive oil and Brussels sprouts; bake in a 350°F oven for 10 minutes until caramelized
8. Remove from oven and add chicken stock; over medium heat, stir well and heat through
9. Add pasta, bacon and pecans mixing well
10. Sprinkle with Parmesan cheese before serving
