Grilled Sausage and Peppers Rotini Recipe

Take your sausage from bun to bowl.

Serving: 6 people

1 box rotini
1 lb. Italian sausage links
4 tbsp. extra virgin olive oil
1 medium red onion, sliced
1 medium yellow onion, sliced
1 medium red bell pepper, sliced
1 medium green bell pepper, sliced
½ cup white wine
½ cup Parmesan cheese, grated
salt and pepper to taste

1. Bring a large pot of water to a boil
2. Meanwhile, bring a small pot of water to a boil; put in the Italian sausage and cook for 5-6 minutes, remove and set aside
3. Once the sausage is cool, remove the casing and slice into ¼ inch rounds
4. In a large skillet, sauté the sausage in 1 tbsp. of olive oil until slightly golden brown
5. Add the onions and bell peppers and sauté for 3-4 minutes; add the wine and cook until almost gone,  season with salt and pepper
6. Cook the pasta according to the directions; drain and toss the pasta with the sausage and vegetables and top with cheese before serving
