Red, White and Blue Pasta Salad

Pasta gets patriotic.
Ingredients
1 box Barilla Penne
6 tablespoons extra virgin olive oil
3 tablespoons sherry vinegar
1 tablespoon Dijon mustard
1 tablespoon honey
1 teaspoon poppy seeds
3 cups blueberries
1 pint cherry tomatoes, quartered
1 ½ cups Feta, crumbled
salt and pepper to taste
Directions
1. Bring a large pot of water to a boil season with salt and cook the pasta 1 minute less than required cooking time
2. Drain the pasta and toss with 1 tablespoon extra virgin olive oil and place on a sheet tray to cool down
3. In the meantime in a large bowl add the vinegar, mustard, honey and poppy seeds, stir to combine
4. Slowly whisk in the extra virgin olive oil until the dressing has come together
5. Season with salt and pepper to taste
6. Add the cooled pasta, blueberry, cherry tomatoes and feta then gently toss to combine
