Spaghetti with Spiralized Vegetables Recipe

Pasta and spiralized veggies is definitely a “best of both worlds” situation.
Ingredients
1 box thick spaghetti
4 tablespoons extra virgin olive oil, divided
1 clove garlic, chopped
1 tablespoon thyme leaves
2 cups rotisserie chicken, shredded
2 cups spiralized carrots
2 small zucchini, spiralized
2/3 cup Parmigiano, shredded
1 cup chicken broth
Salt and sweet paprika, to taste
Directions
1. Bring a pot of water to boil
2. Meanwhile, sauté garlic and thyme with half the olive oil in a skillet for about one minute
3. Add chicken, zucchini and carrots, sauté one minute
4. Add broth, then season with salt and paprika, bring to simmer
5. Meanwhile, cook pasta according to directions
6. Drain and toss with chicken veggie mixture
7. Stir in cheese before serving
