Texas Stuffed Shells Recipe

Italian and BBQ? What is this, heaven?
Servings: 8 people
Ingredients
½ box jumbo shells
1 lb. shredded, pulled beef brisket
1 ½ cups BBQ sauce
1 jar (24 oz) marinara sauce
2 cups corn, frozen, kernels
1 tablespoon olive oil
½ teaspoon kosher salt
½ teaspoon black pepper
1 cup cheddar cheese, shredded
Directions
1. Bring a large pot of water to a boil; cook the jumbo shells for 9 minutes, drain
2. Meanwhile, heat a 12-inch skillet with olive oil; add corn and sauté until golden brown, season with salt and pepper and remove from heat
3. Combine 1 ½ cups of BBQ sauce and jar of marina sauce in medium bowl
4. In a mixing bowl combine shredded beef, and 1 cup of the BBQ/marina mixture and blend well
5. Stuff each shell with 1 small scoop of brisket mixture
6. Spray bottom of baking pan with pan spray and spread half of the remaining BBQ/marina mixture across the bottom
7. Create one layer of stuffed shells across the bottom, facing up
8. Evenly sprinkle 1 cup of sautéed corn across the top of shells
9. Brush remaining BBQ/marina mixture across the top of the shells
10. Sprinkle remaining 1 cup of sautéed corn and shredded cheese across the top of the shells
11. Cover with foil and cook in the oven on 375°F for 30 minutes or until internal temperature of 165°F; you may also place on grill for 15 minutes or until BBQ sauce is boiling
