Tri Color Penne Caprese Pasta Salad

You’re four ingredients away from a colorful dish.

Ingredients
1 box tri color penne
5 tablespoons extra virgin olive oil
1 pint red cherry tomatoes, sliced into rounds
1 pint yellow cherry tomatoes, sliced into rounds
2 balls (1lb) fresh mozzarella cheese, diced
8 basil leaves, sliced thin
salt and black pepper to taste

Directions
1. Bring a large pot of water to a boil and cook the pasta 1 minute less than package directions
2. Toss the pasta with 1 tablespoon of olive oil and place on a cookie sheet to cool down
3. In a large bowl combine the tomatoes, mozzarella, 4 tablespoon of olive oil and season with salt and pepper, then set aside
4. Once the pasta has cooled down completely add the basil and pasta to the bowl, gently stir everything together and let it rest for 30 minutes before eating
