Muffuletta Pasta Salad Recipe

A classic New Orleans dish, now an easy weeknight dinner.

Servings: 8 people

1 box penne
2 ounces Genoa Salami, diced
½ cup provolone cheese, diced
2 ounces smoked turkey breast, diced
2 ounces smoked ham, diced
¼ cup black olives, sliced
¼ cup green olives, sliced
½ cup yellow onion, finely chopped
½ cup sweet red peppers, chopped
2 tablespoons garlic, minced
½ cup celery, diced
½ cup fresh parsley, chopped
½ cup extra virgin olive oil
⅓ cup apple cider vinegar
2 teaspoons Worcestershire sauce
1 teaspoon tobasco sauce
¼ cup green onion, sliced thin
¼ cup Parmesan cheese, shredded

1. Bring a large pot of water to a boil; cook the pasta according to the directions, drain and cool pasta in refrigerator
2. In large mixing bowl, combine pasta, salami, provolone, turkey, ham, olives, onions, sweet peppers, garlic, celery, and parsley mixing thoroughly
3. Season to taste with salt and pepper
4. In small mixing bowl whisk oil, vinegar, Worcestershire and tobasco sauce; season to taste with salt and pepper
5. Pour dressing mixture over pasta mixture and mix thoroughly; season to taste any additional salt and pepper if needed
6. Cover tightly in container and store in refrigeration overnight
7. Serve in on a large serving platter and garnish with Parmesan cheese and green onions
