Orzo Fried Rice Recipe with Chicken

Ingredients
1 box orzo
6 chicken thighs, boneless and diced
4 tablespoons toasted sesame oil
2 garlic cloves, sliced
2 cups broccoli florets
1 cup small carrots, diced
1 cup Shiitake mushrooms, sliced
2 tablespoons ginger, grated
4 spring onions, chopped
1/3 cup sesame seeds, toasted
Soy sauce to taste
Directions
1. Cook orzo according to box directions.
2. Sauté chicken thighs with sesame oil. Add garlic, carrots, mushrooms and ginger.
3. Drain and toss pasta with chicken mixture, season with soy sauce and reduce.
4. Serve topped with sesame seeds and sliced spring onions.
