Cheesy Rotini with Tomato Passata

Cheesy Rotini with Tomato Passata
Inspired by Danny Pudi
Ingredients:
1 box Barilla Rotini
1 jar Barilla Rustic Basil Pesto
1 28-ounce can Italian style tomatoes
1 medium Vidalia onion, chopped
2 tablespoons extra virgin olive oil, divided
6 ounces Burrata cheese, roughly chopped
Salt and black pepper to taste
Directions:
1. Pass the tomatoes through a vegetable mill or process briefly in a blender to produce a fairly smooth sauce.
2. In a skillet, sauté onion with olive oil for about five minutes over medium heat.
3. Add tomatoes, season with salt and pepper and bring to boil, simmer for 5-10 minutes.
4. Place a pot of water to boil, cook pasta according to directions, drain and toss with tomato.
5. Serve with Burrata over the top, and drizzle with pesto.
