Cheese & Spinach Tortellini Soup with Thyme Chicken Bone Broth

Thanks to purported health benefits such as immune system support, digestive help and stronger hair and nails, bone broth has been all the rage this year. Hop on the bone broth train and soak up some of those beneficial minerals and nutrients with this delicious, aromatic cheese and spinach tortellini soup. It's a classic pasta recipe you won't soon forget!
Thyme-Scented Chicken Bone Broth with Spinach & Cheese Tortellini
Serves: 8Prep Time: 5 minutes
Cook Time: 11 minutes
Ingredients
1 package Cheese & Spinach Tortellini
2 packages (32 oz. each) chicken bone broth (8 cups)
4 sprigs thyme
½ cup shredded carrots
8 cups lightly packed baby spinach
Kosher salt and ground black pepper, to taste
Instructions
1. Bring broth and thyme to boil in large sauce pan on high heat. Add carrots. Simmer on low heat 5 min.
2. Meanwhile, cook tortellini pasta as directed on package; drain.
3. Add baby spinach to broth mixture. Season with salt and pepper.
4. Divide spinach tortellini among 8 serving bowls. Top with broth mixture and serve.
Ingredient Tip: Bone broths often have more protein than traditional broth because in their production more meat is used, in addition to bones, to add flavor and nutrients. Feel free to substitute standard canned or homemade chicken broth when making your spinach and cheese tortellini soup.
