Indian Spaghetti Recipe with Leek & Curried Pea Sauce

Vegetarian Spaghetti with Leek & Curried Pea Sauce

Cook Time: 15 minutes
Ingredients
1 box Barilla® Spaghetti
2 tablespoons butter
1 bunch leeks, white and light green parts only, halved, cleaned and thinly sliced
2 tablespoons Madras curry powder
2 cups reduced-sodium vegetable broth
1 pkg. (1 lb.) frozen peas, thawed
2 tablespoons chopped mint leaves
kosher salt and ground black pepper, to taste
Directions
1. Melt butter in large skillet on medium heat. Add leeks; cook 3 to 5 min. or until translucent, stirring frequently. Stir in curry powder; cook 30 seconds. Add broth; bring to boil. Remove from heat.
2. Pour into blender container. Add peas and mint. Blend until smooth.
3. Cook spaghetti pasta as directed on package. Drain; return to pot. Add pea mixture. Season with salt and pepper. Mix well.
Serving Suggestion: Garnish each serving with a fresh mint sprig.
