Gemelli Instant Pot Recipe with Winter Vegetables

Ingredients

1 box Gemelli pasta
3 tbs. extra-virgin olive oil, divided
1 cup butternut squash, diced
2 cups broccoli florets
1 cup carrots, diced
1 cup cauliflower florets
4 cups water
½ cup Parmigiano cheese, grated (option to leave this out to make this dish vegan)
1 tbs. Italian parsley, chopped
Salt and black pepper, to taste

Directions
1. Sauté veggies in Instant Pot with half (1.5 tbs.) of the extra-virgin olive oil for 4 minutes; season with salt and pepper and then turn off the Instant Pot.
2. Add gemelli pasta and water into the Instant Pot and stir well. Close the Instant Pot lid and valve, set the timer to 7 min and cook at the low-pressure setting.
3. Let the Instant Pot fully depressurize by opening the valve. Once it has fully depressurized, carefully open the lid.
4. Stir in the cheese and parsley and finish with the remaining extra-virgin olive oil before serving.
