Mediterranean Elbow Pasta Salad Recipe

Mediterranean Elbow Macaroni Pasta Salad

Cook time: 10 minutes
Ingredients
1 box elbows pasta
1 ½ cup cherry tomato, halved
1 ½ cup black olives (may substitute for Kalamata Olives)
4 ounces tuna in olive oil, drained
¾ cup mozzarella cheese, cubed
1/3 cup extra virgin olive oil
½ teaspoon salt-packed caper, soaked excess salt removed
Directions
1. Bring a large pot of water to a boil. Cook pasta elbows according to box instructions.
2. Drain and drizzle pasta with a small amount of extra virgin olive oil. Refrigerate for 2 hours.
3. Combine cherry tomatoes, olives, tuna, cheese, capers, basil, salt, pepper and remaining oil.
4. Marinate for 2 hours.
5. Toss elbow pasta and marinated ingredients in a large bowl.
