Ziti Pasta with Zucchini Blossom Homemade Pesto Recipe
Spring has finally sprung and there is no better time to try fun, in-season vegetables. Since edible flowers are trending, we've created a fresh, new homemade pesto pasta recipe with heirloom tomatoes and sorrel for you to sample. Zucchini blossoms make a beautiful addition to this simple and refreshing vegetarian ziti pasta recipe. Though ziti is typically baked, this easy pesto pasta dish will have you thinking of sustainability and healthy eating while you taste its delicious flavor.
Ziti with Zucchini Blossom PestoIngredients
1 box ziti
15 zucchini blossoms
¼ cup Parmesan cheese
5 tablespoons olive oil
1 clove garlic, boiled in milk
1 cup heirloom tomatoes, diced
1 cup sorrel
1. Bring a large pot of water to a boil and cook ziti pasta according to package instructions.
2. In a food processor, combine zucchini blossoms, garlic and cheese. Pulse until blended.
3. With the food processor still going, add in olive oil. Season with salt and pepper.
4. In a bowl, combine tomatoes, sorrel, pesto and ziti and mix to include all ingredients.
