Barilla® Angel Hair

with Artichokes, Toasted Pine Nuts & Breadcrumbs

Ingredients for 8 people

  • 1 box Barilla® Angel Hair 
  • 4 Artichokes, Sliced 
  • 6 slices Fresh Lemons 
  • 1/4 cup Extra Virgin Olive Oil 
  • 1 clove Garlic, Chopped 
  • 3 tablespoons Fresh Parsley, Chopped 
  • 1 cup Chicken Broth 
  • 3/4 cup Breadcrumbs 
  • 1/4 cup Pine Nuts 
  • 1/2 cup Romano Cheese, Grated

    Bring a large pot of water to a boil
  2. 2
    Peel artichokes and clean out the center. Cut in half and then dice. Place diced artichoke pieces into a large bowl filled with water and lemon slices to prevent discoloring

    Sauté garlic in olive oil in a large skillet over medium heat until garlic is slightly yellow

    Add artichokes to the skillet and sauté until cooked thoroughly

    Add parsley and chicken broth. Continue cooking until liquid is reduced by half

    Toast breadcrumbs and pine nuts in a separate dry skillet over medium heat. Mix in grated cheese

    Cook pasta according to package directions. Drain and toss with artichokes. Top with breadcrumb and pine nut mixture
